Blueberries are not exactly typical in our kitchens. They just recently started to be more planted in our farms and used in our recipes. After having blueberries pancakes since we started to get delivery for this gems through HELPCA, I wanted to bake something delicious with them and this is what we made in our kitchen. Ingredients
One medium loaf
Fresh Blueberries / 1 cup ( 2 boxes , Valentín)
Flour of your choice, we love gluten fruit breadfruit or quinoa / 1 1/4 cups
Apple Cider Vinegar / 2 tablespoons
Milk of your choice we love goat and nut based milks / 1/2 cup
Coconut sugar / 1 cup
Cinnamon powder / 1 tsp
Vanilla / 1 tsp
Lemon juice / 2 tsp
Bananas / 2 u
Coconut oil / 1/2 cup
Baking soda / 1 tsp
Baking powder / 2 tsp
Directions
Mix the milk and vinegar.
Dust blueberries with a bit of flour.
Mix dry ingredients together very well.
Mix wet ingredients together.
Add wet to dry and mix well.
Fold in your blueberries.
Grease a loaf pan and bake on medium temperature ( 350F) for 1 hour.
