This is my favorite vegan & gluten free version of this amazing dessert. It's probably one of the most popular desserts in all the ticas grandmas menu.
Super fast and easy to make and can stay in the fridge for a few days without a problem. We eat it warm when is fresh made and then keep it in the fridge covered and have it cold, by itself or with toppings like nuts or fresh fruits as a dessert. #dessert #vegan #glutenfree #tica #tradition
Ingredients (Serves around 12 portions)
Coconut milk / 2 liters
White rice / 1/2 kilo
Cinnamon sticks / 6 units or 1 small bag
Cinnamon powder / 1 teaspoon
Raw sugar or coconut sugar / 2 cups
Himalayan salt / pinch
Cloves powder / 1/2 teaspoon
Nutmeg powder / 1/2 teaspoon
Instructions
Put all ingredients in a pot with a thick bottom on a low heat, stir constantly to avoid sticking on the bottom. Cook for about 30 minutes, rice needs to be soft.
